In what order should you eat a hotel buffet?
The short answer: survey → signature → cold dishes → expensive meat → (palate reset) → dessert. Here are the manager’s principles that apply no matter which hotel you’re at, in order.
Seven steps that work at any hotel
- Eat breakfast first. "Starving yourself the day before so you can eat more doesn't work" was the manager's opening line. Arrive on an empty stomach and you'll rush to fill up on the first plate.
- Scan the room before you plate anything. This is the step the manager called most important. Decide what you'll focus on today and map the stations before you pick up a plate.
- Start with the signature. The buffet's marquee dish of the day. On this visit it was lobster and king crab grilled to order. The king crab comes both cold and warm — don't miss the warm one.
- Cold food cold, all at once. When you go for sashimi, sushi, and seafood, grab the other cold dishes in the same trip, then move on to the hot stations.
- Meat by unit price. The manager's "eat first" four are lobster, LA galbi, lamb chops, and beef short ribs. Sirloin fills you up fast, so it goes last or gets skipped. At this hotel, lamb chops and short ribs cost more than sirloin.
- Fruit with the meat. Eating kiwi and pineapple on your final plate "does nothing," he said. Have a few pieces alongside the meat instead. Pineapple's bromelain and kiwi's actinidin are known protein-digesting enzymes — though treat how much faster it actually helps as the manager's own experience.
- Pho broth before dessert. Like the sorbet between courses, it rinses the palate. Once the greasy flavors are cleared, you can actually taste the dessert.
You can ask the live-station chef
- Don't take cold grilled meat. If only one or two pieces sit on the tray, ask the chef to grill a fresh one. Stacked grilled items get swapped every 15–30 minutes.
- Ask for only the fish you want. You can request just white fish, just salmon, and so on. In the manager's words, "get friendly with the live-station chef."
- "Could I get a freshly grilled one?" or "Just the white fish, please." is all the English you need.
What should you avoid eating first at a buffet?
The short answer: food that fills you up fast and food you can get anywhere. Even the guest in the video, who ate in order, hit sirloin too early and stalled out a few bites into the pasta.
