Bingsu (氷水, literally “ice water”) is Seoul’s summer thermometer. Come May, newspapers run their annual “how much is this year’s hotel apple mango bingsu” piece. At the same moment, convenience-store fridges across the city fill with 4,000-won cup bingsu. The same food sells at a 47x price spread — and both ends sell out. That’s the Seoul bingsu market in a sentence.

What kind of bingsu do Seoulites actually eat?
The Korean standard for “a place that does bingsu right” is surprisingly simple. Did they freeze milk into the ice block? Did they boil the red beans from scratch? If the answer to both is yes, the rest is personal taste.
Freeze water and shave it, and you get a bowl of crunchy crystals that melt fast into a puddle. Freeze milk and shave it, and you get something closer to snow — powdery, airy, and holding its shape to the last spoonful. This milk-ice technique was commercialised in 1985 by Mil Top inside Apgujeong Hyundai Department Store, effectively creating modern Korean bingsu as we know it.
The red bean (pat) follows the same logic. Canned sweet red bean is uniformly sweet and, frankly, forgettable. Red beans boiled for four hours in a traditional cauldron keep their individual shape and carry a deeper, less cloying sweetness. This is why every old-guard bingsu shop in Seoul puts “100% domestic red beans” on the sign outside.
A bingsu bowl is meant for sharing
Unlike Japanese kakigori or Taiwanese chhoah-peng, a single serving of Korean bingsu is sized for two to three people. Order one per person at a speciality shop and you will leave half of it melting on the table. If you're solo, look for the growing number of one-person cup bingsu options, or check the menu for a separate "S" size.

This is where the real volume happens. The defining story of summer 2026 is the cup bingsu. As one-person households and solo café-going have become the norm, low-cost coffee chains have rushed out individual-size cup bingsu, and the price has settled into a tight band: 3,900 to 5,900 won.

Cup bingsu, real-world tips
- Prices shift by location, timing, and promotions. Check the brand's app before you walk in.
- Delivery bingsu costs more than in-store. Sulbing runs a separate delivery-only price on bingsu items that tacks on an extra 1,000 won.
- Cup bingsu melts fast. If you're walking more than ten minutes with one in hand, eat it at the shop.
Among speciality shops, Sinchon’s Homilbat is the benchmark for this tier. Open since 2009, it serves milk bingsu at 7,900 won and green-tea bingsu at 8,500 won. The university-district location has kept its prices pinned down for years — which is why it’s earned the reputation as “the last neighbourhood where you can get proper milk-ice bingsu for under 8,000 won.”
Sulbing is the name most familiar to international visitors. Injeolmi bingsu (shaved milk ice topped with soybean-dusted rice cake) at 9,900 won, choco brownie bingsu at 13,500 won, apple mango cheese bingsu at 14,500 won. In 2026, Sulbing raised prices on 11 of its 28 bingsu items by 400–600 won each, an average bump of 4.2%.

Signiel’s 185,000-won figure isn’t for a standalone bowl — it’s a two-person set: Jeju apple mango bingsu + Jeju mango tart + two coffees or teas. The priciest single bowl is the Four Seasons’ 149,000 won.
How to do hotel bingsu without completely blowing the budget
- Start at Le Méridien Myeongdong (42,000 won) or JW Marriott Dongdaemun (83,000 won). Same Jeju apple mangoes, less than half the price of the top tier.
- Nearly all are sized for two to three people. Divide by headcount and the per-person cost feels completely different.
- Major hotel lounges book out fast on summer weekends. Weekday afternoons are your best bet for a relaxed seat.
- Serving periods vary by hotel. Lotte Hotel World, for example, wraps up at the end of June — check before you go.
