The short answer
- The star of Korean desserts in 2026 is tteok (rice cake). When the Dubai chewy cookie craze cooled, butter tteok (March), fruit-and-yogurt chapssaltteok (summer) and pizza seolgi (autumn) took turns at the top.
- Remember three: pizza seolgi, steamed rice cake with pizza toppings (Yeongdo, Busan and Bupyeong, Incheon); Gwangju shop Changeok-tteok's castella-dusted pumpkin injeolmi; and butter tteok, crisp outside and chewy inside.
- Many of the original shops are outside Seoul. In the city you can try these at neighborhood tteok shops and dessert cafés, department store pop-ups and new convenience store products (CU's Pizza Jeolpyeon, ₩3,800, among others).
- Tteok is best on the day it is made. Shop popular tteok houses in the morning, and freeze leftovers individually wrapped.
A rainy weekday morning in the rice cake alley of Bupyeong Market, Incheon. People with umbrellas have been in line for 40 minutes. Most are in their twenties and thirties; at this hour there are high school students in uniform, too. They are not waiting for cake or bread. They are waiting for baekseolgi, plain steamed white rice cake — or more precisely, baekseolgi topped with tomato sauce, cheese and pepperoni: pizza seolgi. One shop in this alley sold about 200 a day when it launched pizza seolgi in late June; by autumn it was making 4,500 on weekdays and up to 6,000 on weekends (iNews24 on-site report).
How did grandma’s snack become the dessert Korean twentysomethings queue for? This guide explains what each of 2026’s rice cake desserts actually is, what it costs and — most usefully for anyone staying in Seoul — where you can really buy it. Hanjeongseon, the Seongsu brand behind the fruit chapssaltteok craze, has its own Hanjeongseon guide, so here we look beyond it.
Why did tteok suddenly become dessert?
Because the craze for chewy textures moved from the Dubai chewy cookie to rice cakes, and tteok shops started putting new toppings on that chew. The Dubai chewy cookie that swept Korea from late 2025 into early this year was all about jjondeuk — that bouncy, stretchy bite. When it cooled, people looked for the same texture somewhere cheaper and more familiar, and found it in the window of the neighborhood rice cake shop.
The trend even comes with its own vocabulary: tteokji sullye (rice cake + pilgrimage), touring the country’s famous tteok shops; “tteok-pen-run,” queuing before opening; and “tteok-ketting,” the battle for reservations. “Halmaenial” — millennials with grandma’s taste buds — got pulled back into service too.
The life span of a rice cake fad may be shorter than you think, though. In March, a Seongsu café sold 150 pieces of butter tteok within eight minutes of putting them out; six months later, butter tteok already gets called “so last season.” For how fast Korean dessert trends turn over, see our Korean dessert trend timeline. For travelers, the lesson is simple: eat it while you are here.
Which tteok desserts are trending in 2026?
Pizza seolgi, pumpkin injeolmi, butter tteok and fruit-and-yogurt chapssaltteok are this year’s big four, with seolgi and injeolmi made with matcha, black sesame or cheese following in their wake.

Pizza seolgi — “pizza made of rice cake,” born in Yeongdo, Busan
Yeongdo Dari Tteokbang in Namhang Market, Yeongdo-gu, Busan is known as the original. Reports put the price at about ₩1,400 each, with a limit of 10 per person, and on weekends it sells out by late morning. Reservations close at 4 p.m. the day before, and even those fill early. The mild sweetness of the steamed rice cake under salty tomato sauce and cheese is the kind of combination where the first bite makes you wonder why it works and the second one convinces you.
The nearest pilgrimage site to Seoul is the rice cake alley in Bupyeong Market, Incheon. Seongsim Tteokjip started making pizza seolgi around 20 June after customers kept asking for the Yeongdo version, and Pungnyeon Tteokjip across the alley sells it too. Seongsim’s is thin and salty like pizza dough; Pungnyeon’s is thicker and lets the rice cake flavor come through. Take Seoul subway Line 1 to Bupyeong Station and it is walkable from there — an easy half-day trip.

Pumpkin injeolmi — how a 60-year-old Gwangju tteok shop went national
Changeok-tteok began in 1965 as a small rice cake shop in Dongmyeong-dong market in Gwangju and is now run by the third generation. Its signature pumpkin injeolmi layers thin, chewy rice cake around a filling and finishes it with house-baked castella crumbs; each piece is individually wrapped, so it travels well. In spring 2026 it spread across social media under the line “if Daejeon has Sungsimdang, Gwangju has Changeok-tteok,” and singer IU made headlines when she said on her own YouTube channel that she made “my first-ever open-run for Changeok-tteok,” buying rice cakes as snacks for a music video shoot.
The catch: there is no permanent store in Seoul. As of October 2026, the confirmed stores are the Gwangju main store (Jungheung-dong, Buk-gu) and a Dongmyeong-dong branch. It does come up to Seoul often for pop-ups, though. About 10,000 people visited its pop-up at The Hyundai Seoul from 14 to 20 August, and in June it ran a month-long pop-up in the waiting hall of KTX Gwangju Songjeong Station. It has also sold frozen rice cakes by TV home shopping and delivery for more than a decade.

Butter tteok — the March hit that dethroned the Dubai chewy cookie
It started with the Shanghai snack huang you nian gao (黄油年糕, “butter rice cake”). Mix glutinous rice flour and tapioca starch with milk and butter, bake it, and you get a crisp shell around a chewy, rice-cake-like center. It exploded in Korea in March 2026, and at about ₩2,000 a piece it was far easier on the wallet than the ₩7,000-plus Dubai chewy cookie. Plenty of people baked it at home, too: Emart’s glutinous rice flour sales from early February to 10 March were up 108.6% year on year.
Several Seoul dessert cafés still make it. Well-known names include Iutjip Tongtongi in Gangnam (chestnut-shaped), said to be the first in Korea to sell it; Oud Seongsu, whose gluten-free madeleine-shaped version drew queues; and Café Eoi in Mapo (heart-shaped), a bargain at ₩1,500. Oud says the flavor and chew actually come alive once it cools.

Where can I try tteok desserts in Seoul right now?
If you have no time to chase the originals across the country, Seoul’s neighborhood tteok shops and dessert cafés are the answer. Here are the Seoul shops Korean magazines picked as “rice cake shops on the rise” in 2026, by neighborhood.

Practical tip: how not to strike out at a tteok shop
- Go in the morning. Tteok shops steam their rice cakes before dawn and sell from early morning. Popular items are gone by lunchtime, and by afternoon the shelves are often bare.
- Buying one piece is fine. Most shops sell individually wrapped or small packs, so it is easy to taste two or three kinds.
- Avoid the days right before holidays. Just before Chuseok and Seollal, tteok shops are slammed with songpyeon and garaetteok orders.
- Many tteok shops have no seating. These days the move is to carry your haul to a nearby café and eat it with coffee.
Can I buy tteok desserts at convenience stores and department stores?
Yes — and for travelers who hate queues, this is the most realistic route. Whatever goes viral at tteok shops reaches convenience stores and franchises within a few months.
🏪 Rice cake desserts at convenience stores, franchises and department stores (as reported, October 2026)
| Where | Product | Price | Notes |
|---|---|---|---|
| CU | Pizza Jeolpyeon | ₩3,800 | Launched 8 October, regular item. Jeolpyeon instead of seolgi, with tomato sauce, mozzarella, pepperoni, corn and olives |
| CU | Dubai chewy chapssaltteok | — | Launched 15 October 2025; about 2.8 million sold |
| GS25 | Hanjeongseon yogurt chapssaltteok | ₩3,900 | Frozen dessert launched 3 September; pistachio flavor added 15 October |

| Hyundai Department Store Bezzle | Sweet pumpkin injeolmi milk bread | ₩8,500 | Launched in July; about 6,000 a month. A loaf with injeolmi baked inside |
CU’s Pizza Jeolpyeon swaps steamed seolgi for chewy jeolpyeon, so the texture is not the same as the original — but for ₩3,800 it is plenty to find out what “pizza-flavored rice cake” means. For how Korea’s convenience store chains differ, see our Korean convenience store brand guide.
How do I find tteokji sullye pop-ups?
Famous regional tteok shops come to Seoul department stores and convenience stores in short pop-ups, usually about a week long. Just the main 2026 pop-ups show the pattern.
📅 2026 rice cake pop-ups in Seoul and the capital region
| When | Where | What |
|---|---|---|
| All of June | KTX Gwangju Songjeong Station waiting hall | Changeok-tteok pop-up; about 10 items including pumpkin injeolmi |

| August | Lotte Department Store Jamsil | “Tteokji sullye” pop-up; more than 20,000 buyers |

Practical tip: catching the next pop-up
- Check the official Instagram accounts of the Lotte, Hyundai and Shinsegae food halls and pop-up listing sites one or two weeks before your trip.
- For popular pop-ups, registering on the waitlist before opening is standard. At The Hyundai Seoul's Changeok-tteok pop-up, the waitlist opened at 9:20 a.m. on B2, and you headed to the B1 counter when your alert came.
- Regional shop pop-ups bring a fixed quantity, so afternoon sell-outs are common. Opening day and weekday mornings are the safest bet.
How long does tteok keep, and how should you eat it?
It is best eaten at room temperature on the day it is made. The chew comes from starch that firms up quickly, which is why putting tteok in the fridge actually makes it hard. Here is what tteok shops commonly advise.
🧊 Storing and eating tteok by type (general tteok shop advice — the shop's own instructions come first)
| Type | Storage | How to eat |
|---|---|---|
| Seolgi (baekseolgi, pizza seolgi, matcha seolgi) | Room temperature on the day; freeze leftovers individually wrapped | After thawing, a few seconds in the microwave softens it |
| Injeolmi and chapssaltteok (pumpkin injeolmi, etc.) | Room temperature on the day; freeze leftovers individually wrapped | Thaw naturally at room temperature |
| Butter tteok | Room temperature on the day | Crisp when warm, chewy when cool — shops differ on which they recommend |
| Tteok with cream, fruit or yogurt | Refrigerate or freeze | Check the shop’s card |
Background: taking tteok home
- Some people freeze plain rice-and-red-bean tteok and carry it home in a cooler bag, but tteok containing meat (pepperoni), cheese, cream or fruit is restricted at the border in many countries. Check your destination's food import rules first.
- Some shops, like Changeok-tteok, sell frozen tteok by delivery, but almost always within Korea only.
- The surest souvenir is a photo. A pizza seolgi cross-section is funny enough on its own.
Are tteok desserts worth it for foreign visitors?
If you love chewy textures, they are the best snack in Seoul; if you are expecting soft cake, they may throw you. Tteok is less sweet than Western desserts, and the chew is the whole point. That is why some first-timers call it “bland.”
How mochi and chapssaltteok differ, and what chapssaltteok means to Koreans, is covered in detail in our Hanjeongseon guide. One thing worth saying here, though: the 2026 tteok boom is less about “new desserts” than about old tteok shops being rediscovered. The pizza seolgi original is a 27-year-old market shop; pumpkin injeolmi came out of a 60-year-old rice mill. When the trend moves on, those shops will still be steaming rice cakes tomorrow morning. So if the line is long, step into the ordinary tteok shop one alley over. That is usually where the rice cake you end up remembering is hiding.
